It is unclear what these different rays (diffuse rays, glossy rays, transmission rays, etc.) DO when they are turned on or off.

Those ray types make the object visible to a ray that previously interacted with a material component matching that of the ray visibility setting.
Diffuse Ray Visibility On means that the object is visible to rays that previous interacted with the Diffuse component of a material.
Glossy Ray Visibility On means that the object is visible to rays that previous interacted with the Glossy component of a material.
Transmission Ray Visibility On means that the object is visible to rays that previous interacted with the Transmission component of a material.
I think the page would be more helpful if the descriptions were more like they are on this page (Light Paths, which--funny enough--references and links to the page we are talking about) https://docs.blender.org/manual/en/latest/render/cycles/render_settings/light_paths.html?highlight=light%20rays%20node.
A link to this page might also be helpful.
