This is most likely the same issue as this #94479 (GPU Subdivision surface modifier does not apply to Cycles renders )

Can you confirm?

@Alaska

Yes, it's related
I can confirm that disabling Sub-D GPU fixes this issue.

But, this issue occurs for me only in files created prior to 3.1.0.
When I create a new file in 3.1.0 it seems to work with GPU acceleration sub-d.

That's odd. When you create your new file in Blender 3.1.0, are you sure you're using the right render settings? If the render engine is set to EEVEE or Workbench, then you won't experience this issue, but if you change it to Cycles you should.

Yes, your right. It was the render engine. This is just a duplicate of https://developer.blender.org/T94479
