Can you test again in latest 3.2.0 build?: https://builder.blender.org/download/daily

I don't see any change related to metal committed in corrective release.

it is still hanging once in a while while rendering and I have no other option but to kill the process.

The message: "Insufficient Memory (00000008:kIOGPUCommandBufferCallbackErrorOutOfMemory)", indicates to me that the render is overshooting the system's memory resources.
Does this message really appear with any .blend file, or is it just in some complex scene?

Note that, while we want to improve Blender to handle cases memory gracefully, this is not currently considered a bug.
You can always try to render with CPU which usually has more memory space available.
