Short description of error
Materials assigned to instances using geometry nodes do not show up in .blend or FBX export (when imported in to Unity (latest)). Works as expected when exporting as OBJ.
Exact steps for others to reproduce the error
Assign material to instances using geometry nodes. (See attached file.) Import in to Unity.

I didn't test with unity, but I re-imported into Blender and the boxes were white, so I don't doubt there's a bug. However, it's not an issue with geometry nodes but with the FBX exporter. It will be up to whoever is maintaining that to fix this then.
