Technically this is not an error. When you delete all the points in the beginning, you have minimized the calculation value. This doesn't change when you add new points, as this is a manual setting. To fix this, follow this way; Properties --> Object Data Properties(with green icon) --> Active Spline tab --> Order U (default is 5, but decreases to 2 when points are deleted). If this fixes the issue, mark it as "Solved".

Thanks for the Quick response!
Yes this actually fixed it.

But shouldn't this still be considered a problem, because most likely many users are going to have this problem at some point, which is not artist friendly.

I am in no position of being able to judge this in any case, because I am not experienced as a UI Designer or as a Developer, however as a Artist I felt frustrated and helpless, because this was a really hidden option to enable that you don't casually stumble upon.
Can't this be investigated to have some changes of the behavior to be less likely to "cause errors"

Thank you again!

I agree. And it's actually not that hard to fix it. A few lines of code is all it takes to automate this. I hope they fix it. Because it would make more sense to change this value later. I'm glad I helped : )

Thanks for the report.
The source of this problem is the same one described in #40378 (Nurbs curve order setting won't preserve on duplication)

In #40378#231900, @ideasman42 wrote:
This is intentionally clamped, but it could be clamped at runtime so that it would be possible to extrude and keep previous order.

Set as TODO:
http://wiki.blender.org/index.php/Dev:2.5/Source/Development/Todo/Tools#Curves

The TODO page has been moved to #55362 (Blender development todo list -- Tools (migrated from wiki))

Although the steps are different, I'll merge the reports. (It could be separate but the description needs to be edited).
