In EEVEE, the final rendering result of the fur is different from the viewport, and the final rendering result has no additional subdivision.

If you set Render > Path > Steps to the same as Viewport Display > Strand Steps, then that seems to match.
Pretty sure there is something wrong, this has actually been reported before, see #67700 (The Viewport Display setting of Particles affect the Render result with Eevee ) (shame on me this has been lying around for some time -- needs another look...)

Will merge these reports though

If you set `Render` > `Path` > `Steps` to the same as `Viewport Display` > `Strand Steps`, then that seems to match.
