Short description of error
When I type the letter A in certain fields, such as renaming a curve within the Outliner window, it automatically selects all other letters that have already been typed on the same line and does not allow the letter A to actually be typed. It's as if I give the command to select all the text. The bug is only overcome when you press the Shift key while typing A, but not in low case forcing it to type in uppercase. Exact steps for others to reproduce the error
[Double-click on a curve name (in the "Outliner" window) and rename it using the lowercase "A" letter.]

I can't answer you if this is just on Mac, but besides this problem, most of the time I can't even rename the curves. For this I am required to restart the application. Often the "Outliner" palette scroll bar does not work either.

When I right-click, there is often simply no answer. Therefore I cannot, for example, delete, move, or rename anything in this palette.

I can not reproduce it on osx 10.14.6.
Can you reproduce it after renaming ~/Library/Application Support/Blender/2.81 and making sure there are no custom shortcuts in apples system preferences ?

Just rename ~/Library/Application Support/Blender/2.81 to ~/Library/Application Support/Blender/2.81_backup, start Blender (do not import the previous configuration) and see if you still can reproduce the error. Afterwards reverse the rename and you'll get your custom configuration and installed addons back.

Thank you for reminding me of the existence of User preferences. I found the preferences of keyboard shortcuts (Keymap) and identified two commands that exist that do not require add-ons by default (eg control, command, shift etc.). Commands only require the user to type in the letters that prevent items from being renamed in the "Outliner" palette, the letters "A" or "C" (without having to type command or control, for example), see the screenshot.

These predefined commands are linked precisely to the "Outliner" palette. I disabled these commands and saved preferences, but this only took effect after I restarted the operating system.

Note: I realized that after I did the procedure you recommended, commands that previously had no response are now working, such as Cmd + Z, which previously did not work.
