Also tested this in Version 2.93.0 (2.93.0 2021-04-19) and is broken there as well
Short description of error
I accidentally hid all of a mesh in edit mode and got a visual glitch and it seems to be in every version of Blender. The glitch goes away when you reveal the hidden object

Exact steps for others to reproduce the error
Add a monkey
Add a subdivision surface modifier set it to 2 or higher
Apply the modifier
Tab into edit mode and hit the h key to hide and you'll see the glitch.

May be duplicate of #94936. Please check if this happens when you disable or enable GPU subdivision in Preferences > Viewport > Subdivision

Since the modifier is applied, it is unlikely to be a problem with GPU subdivision.

Yes, you are correct, I saw picture and modifier mentioned, so immediatelly thought this will be GPU subdiv issue.

I can confirm the problem.
It seems that when all edited geometry is hidden, some garbage is read in the GPU.
