When I loaded up an old project, and I clocked on material preview, I saw that the color was actually all black
Steps to recreate
Just open up a new file and change the color on the material tab; to any color, and then click on material preview.

Please try updating your GPU drivers and see if it helps: https://docs.blender.org/manual/en/latest/troubleshooting/gpu/windows/intel.html

If it doesn't help, then can you share a system information file? This can be done by:

  • Opening Blender
  • Selecting Help -> Save System Information from the top of Blender
  • Save the file somewhere.
  • Then upload the file here.

I just ran into something similar after I updated my GPU drivers. Since updating drivers causes shaders to recompile, I cleared out my Temp folder to force another recompilation, and after that the issue was gone. So I assume the cause of that was that somehow the shaders compiled faulty.
I can't confirm if this is the same cause, but the issue was the same (everything rendering black).
