Worked: (newest version of Blender that worked as expected)
Short description of error
When I Work with Multiple Objects with Modifiers like "Bevel" "Solidify" "Subdivision Surface" and I go to Edit Mode to do Some UVs, The Overlay Explode, Most of the time, as if the UVs were terrible.
The Pattern Changes with UV Sync, when changing the Select Mode in the UV Editor (Vertex, Edge, Faces).
It's a Bug I did not have with version 3.0 or below

I can confirm this on version 3.1.2. This only happens when GPU subdivision is enabled.

This looks a lot like #96372 (UV Editor doesn't work when GPU Subdivision in the Viewport is enabled), could we check if this is still an issue with a 3.2 build from https://builder.blender.org/download/daily/?
