Blender crashes randomly on Mac OS
It can crash randomly after startup even if we do nothing like this example.
It has also been reported that it happens often when try to save the file after several minutes of work (#86565).

From crash logs I think this report and #86588 is duplicate of #84845 (Crash with Random occurrence on MacBook Pro Big Sur )
@mano-wii or @ankitm can you check since this is Mac OS related?
A couple of more reports about "Random crash on Mac OS" are still open. Not sure what to do with them.

In fact they are related. Both show that the crash occurs on
gleRunVertexSubmitImmediate

sorry for asking but are you sure the topic https://developer.blender.org/T97007 I posted last week is related to this Bug ?
I have no experience with programming but here it is talking about earlier versions of Blender with which I didn't had that problem.
The problem only happens on blender 3.1 with Metal support on. Moreover I've testing 3.1 more the last few days and i have noticed that the problem does not occur when Metal support is off (I am still testing it but so far when metal is off everything run as they did in 3.0.
I also noticed that the problem is more persistent when hair particles are precent in the scene. For example some scenes with lots of geometry + hair particles with Metal on will freeze the render as soon as all the calculations are done and will make the whole computer to freeze as well and from there the display glitches or it restarts.
Some times the render will start normally after the calculation but with only the hair particles visible on the scene while the meshes won't render. (none of these happen with metal off)

@PanagiotisPagonis Metal is only supported in Cycles compute, but the crashes happen while drawing the viewport in your case, similar to this report, that's why I merged it. So it is probably coincidentally than a direct cause.

Given that there is no more OpenGL backend and this is an OpenGL specific issue, assuming this is fixed.
