The scene does not crash when the vertex groups are deleted while keeping the shapekeys. I am not sure if it is solely about the shapekeys. I will test it out when the build is out.
This also explains why adding shapekeys when the multires modifier is enabled was causing the classic MR blowups.

I really hope that they won't reimplement the displacement modifier in geonodes without the UDIM support. The current displacement modifier has no problem with UDIMS which is great.
